ginger chaiWhen I received the March issue of Vegetarian Times magazine I couldn't wait to make all the cupcakes they had featured. So I made them for a busy weekend with lots of guests expected throughout. The pb&j ones were the most fun to make. You indent the top of the muffin with your thumb, spread the peanut butter frosting around the indention, roll in crushed peanuts, and spoon heated jam into the hole. So cute!

I made blueberry muffins awhile back where you push down the middle and spoon in some blueberry jam. They were yummy. Glad you had fun with lots of guests!
